- 4 Russet Potatoes or 7-8 Baby Red Potatoes
- 1/2 Cup Sour Cream
- 2-3 Garlic Cloves
- 1/4-1/2 Cup Milk
- Salt and Pepper
Bring a large pot of salted water to a boil. Scrub and chop the potatoes into 1-inch cubes (I leave the skin on but the preference is yours). Gently place in boiling water until skin is falling off and is potatoes are tender. Drain. In a large bowl mix together potatoes, sour cream, garlic, salt and pepper. Add in 1/4 cup of milk and mix with a hand blender until light and fluffy, adding more milk if needed.
